In Hanoi, despite ongoing hygiene controversies, eateries with questionable cleanliness continue to draw diners who prioritize taste over safety. A recent incident at a popular bun rieu shop on Hang Luoc Street, temporarily closed for its unhygienic conditions, spotlighted this issue. Many customers remain undeterred by hygiene flaws, preferring the flavors offered by these establishments.

The city’s Old Quarter, known for its cramped and busy environment, has long witnessed a tolerance for poor sanitation. Van Hung, a local resident, recounted finding cockroaches in his food at a favored eatery but still frequents similar venues. However, a shift is seen among younger and more discerning consumers who refuse to compromise on cleanliness, often guided by online reviews when choosing where to eat.

Operators in Hanoi struggle to meet modern hygiene standards due to limited space and high rents. Some, like Bui Chi Thanh of Pho Thin Bo Ho, have invested in hygiene improvements to meet growing expectations. Thanh relocated to Hang Voi Street and spent over VND100 million (US$3,800) on upgrades, acknowledging that cleanliness has become crucial for younger patrons.

Looking forward, more eateries may need to invest in hygiene to attract a broader customer base. While some business owners, such as Hoang Minh, suggest formal restaurants are better equipped for such standards, many street vendors might find these upgrades prohibitively expensive. The persistence of unhygienic dining spots is reflective of long-standing habits, but change is on the horizon as consumers demand better conditions, reported VN Express.
