The following appears in the job role description(s),

"...must be legally able to work in Thailand without the Company having to obtain a work permit"

So say for a single Australian national is it impossible to get a permit in this situation or can obtain one himself?

Work permits must be sponsored by a company.

Two options are

1. This company provides you with a work permit

2. Depending on what the business is, you form your own company with 2 million baht in capitalization and 4 Thai employees and obtain a work permit then your company contracts work with this company.

But an individual cannot obtain his own work permit without a sponsoring company.
