Travelling with a wheat alergic friend

Later this year I have a freind and his wife visiting to travel around Thailand for a month. My friend's wife has a serious wheat (gluten) intollerance, so she wanted some advise on how to order, and what to avoid etc. I myself have no experience of this condition so can not really provide any real help. From what I have read on the web I understand Thailand is one of the better places to travel with this condition. We'll be travelling all over Thailand and not just staying in tourist areas.

What I would really like is for my friend's wife to be able to talk (email) to someone who lives here so she can ask all the appropriate questions. If anyone is able to help please can you send me a personal message and I'll put my friend in contact so that she can ask all the right questions.

Plus, it'd be good if one of the folks here on ThaiVisa who writes Thai could write out a paragraph, or at least a couple of sentences on the subject. This could be shown to waitresses/waiters at the eateries as you travel around.

It is really quite easy if you stick to Thai food. Avoid any of the baked desserts that look cake-like. Avoid all the junk food/processed food.

Pretty much all the main dishes, and of course the rice, are fine.

Many thanks for the replies. I am concerned that there are a few things that might be in Thai food that I/she would not be aware of. For example I am aware that Soy Sauce is a big no-no which to me would be a big surprise and something I would not be aware of.

Soy sauce itself has nio gluten. The problem is if it is thickened with wheat. I may be wrong, but I don't think thsi is usually the case with soy sauce in Thailand.

It would be very hard to avoid soy sauce/sauces containing it.
