I think the first half of your translation sounds more like 'there certainly isn't anything' than 'there isn't any certainty'

ไม่มีอะไรแน่นอน แต่เป็นการผจญภัยที่คุ้มค่า

 "There is no certainty. There is only adventure."

My translation would be "ชีวิตคือการผจญภัย จะสนอะไรกับความไม่แน่นอน".
