I am british and I have lived in Thailand for 10 years. I intend to emigrate to ireland and can do so because I am an eu citizen. I intend to take my Thai wife with me which should not be too difficult under the EU free movement directive

  Now we come to the question If my wife gets her Irish visa will she be able to use it to visit other european countries, whilst we are making our way to Ireland

Ireland is not in the Schengen Area, however she could apply for a Schengen Visa as your spouse which should be issued free of charge for Schengen under the free movement directive - for now anyway.

You may find this information from the Irish Naturalisation and Immigration Service useful.

 

At present you and your wife still have the same freedom of movement rights as any other EU/EEA national and their qualifying non EU/EEA national family members; but post Brexit?

 

One hopes that the EU and UK will see sense and come Brexit, 29th March 2019, those already exercising a treaty right in an EU/EEA country or the UK will be allowed to continue to do so.  But if you have not moved to Ireland by then I doubt you and your wife will still be able to do so using the Freedom of Movement directive. I could be wrong, of course; but for the EU post Brexit to allow British nationals to still be covered by the directive and move from the UK to another EU/EEA state the UK would have to reciprocate and allow EU/EEA nationals to do the same in the UK. As immigration was a major reason for many voting leave for any UK government to do that would, in my opinion, be electoral suicide!

As theoldgit says, the RoI is not in the Schengen area so an Irish visa, even if issued under the FoM directive, is not valid for any other EU or EEA state. So your wife will need the appropriate visa, even before Brexit.
