I was planning to travel in Myanmar for 6 weeks and have just found out about the 28 day visa restriction. Is it possible to leave the country and get another visa issued to allow me to travel in the country for longer?

Yes just apply for a second e visa outside of the country and go again. If you still plan on heading south of Rangoon keep an eye on the weather as there has recently been severe flooding.
