The company CANNOT cancel a valid visa, you can stay in country until it expires.

The company CAN cancel a permission to stay extension based upon employment... well actually thats automatically canceled when the employment is as the employment would be the reason why the extension was granted.

If he is on a Business Visa he has 7 days (extension) to leave the country. My understanding of the rules

B-Visa versus permission to stay based upon employment extension.

Read up on it, you  are wrong.

If you are in Thailand on the permission to stay received from entering with a Non B visa, you can remain until the original expiry date of the permission to stay. If you are in Thailand with an extension of your permission to stay based on working, your permission to stay terminates on the day you stop work. At that point, you can apply for an extension of your permission to stay for another valid reason. If you apply for an extension without a valid reason, your application will be denied, but you will be given seven days to leave the country (your extension application fee of 1,900 baht is not refunded).

If you have a multi entry B visa then usually you can stay in the country until the day it expires.

I did that, when I worked for a company.

However, if the company insists on marching you down to immigration in order to terminate your visa on the spot then this would be a very different scenario. This is highly unlikely, IMO.

You will have to return your work permit to the company on your last day at work.

I was always under the impression WP's have to be returned to MOL..

They do, but you can do it yourself or your company can do it.

I didn't say they could.

They could however, depending on what terms (good or bad) that a person leaves on - inform immigration that you are no longer working with them and immigration could then terminate the visa on the spot. In a similar manner that if you were on a marriage visa and get divorced and your wife then informs immigration you are no longer married.

You are in breach of your visa conditions in both scenarios, so the IO is well within their rights to terminate your visa on the spot and give you 7 days to leave the country.

Do you know of any cases where this has happened?

Do they need your passport to cancel a visa/ext?

Work permit needs to be cancelled by you at the labour ministry or wherever it was issued. For that you'll need to print out a form in 2 copies, stating the last day of work and they'll cancel it on that day. You keep the booklet (if you have booklet rather than digital WP). They'll punch through it like they do with passports when you get new one...

I returned my WP book in Nov 2019. I asked to keep the WP book but they refused to give it to me.

Immigration will not cancel a extension without a passport being presented and the holder of it would need to be present as well.

Immigration does not cancel visas issued by a embassy or consulate and in most cases the visa would already be expired or used.
