The chili thing sounds interesting, and will have to give that a try.  Been looking locally for Lao Gan Ma Crispy Chilli in Oil, after watching a YT vid of someone making, seem a bit more than I want to do.  Have to buy online, as no plans on going to Hua Hin anytime soon.  See Tops carries it, but one in HH is small.  Not sure if Gourmet Markets would have.

Got some yesterday in Lotus, and I can tell you that it marries perfectly with my Peanut Butter on my home-made sourdough bread. Thanks for the hint.

Local didn't have, so I ordered 2 off LAZ ... should be here tomorrow-ish 😁

I showed my Mrs the photo you posted, and she went to something very similar in Lotus, saying it was the same stuff. Will be trying it in my Satay Sauce next.
