Not sure how old you are, But after you retire, you really dont stop working.

After working a lifetime it is close to impossible to do for most of us.

The difference is , you work at things of your choosing. 

So what do you do? Maybe improve yourself trough's adult education. Pick up a guitars and start scratching is. (if nothing else it keeps the rodents away).

Play at gardening and farming , and cooking . 

Oh I started playing with Orchid designs  , I find Old wood in the fields and plant orchids in it. 

But if you want to live long you need to find something you are interested in to keep you busy.

Otherwise what's the point.

  • This is not cooking but it is a kitchen tip. Everything that is not too wet , I Vacuum seal, with my Foodsaver.  Use a bag one third longer than you need, and seal it all the way to the top.

Retired at 62.......67 now. Spent the first few years house/villa sitting in Thailand/UK.....then the b****y wife had a house built, without telling me, so stuck in Isaan for the foreseeable.....spend two/three hours a day as it happens playing the guitar, taught myself to use photoshop......just come back from the UK to find another house being built in the back garden.....think she is starting a small resort, bar, restaurant.....so that might keep me busy.

Yesterday, I made a nice bolognese sauce, which is a fancy way of saying "Meat sauce" and this morning I decided to boil some spaghetti to have later for lunch.  

For some reason when watching water , it takes forever to boiI ,, I guess water must be very shy l.

   So here is my trick to get it to boil faster, in the pot I put an inch of two of water and placed on the burner, in the meantime I fill the eclectic kettle with water and turn it on

Remembers, turning it on is a very important part of the process. 

  my scientific theory is that because you cant see the water, it feels more comfortable to do it's thing.

Some people say that water in the electric kettle boils faster because all the heat is applied to the water, but I disagree.  I think my initial theory is more plausible. 

   Anyway. because boiling water is such a chore and time consuming I thought that I would boil a bunch of it , and keep it in the refrigerator for later use. 

What do you think?

1. If you're serious about cooking, I suggest you stop ****ing around. 

 

If you have the time to watch the pot boil, please go to 1.

 

If you have time to postulate and ponder erroneous theories, please go to 1.

 

An electric kettle is purposely built to be the best and most effective way of boiling water, a pot is just a general-purpose utensil, just boil the water in the kettle then pour it into the pot and turn on the gas.

 

I suggest you make up a batch of cooked pasta and freeze for later.

 

Please follow as below:

 

'Cool the pasta slightly, drizzle with a bit of olive or cooking oil, and toss gently. Use about 1 tablespoon oil to 8 ounces cooked pasta. This helps prevent the pasta from sticking together when frozen. Spoon into airtight containers or freezer bags.'

I think the best kitchen tip is to clean up as you go along. Put a pot on to boil? Do the dishes while you are waiting. Have a sink of soapy water to drop dirty dishes in as you dirty them. 

 

My family all like pumpkin soup and I cook it pretty often. A bigger pumpkin is enough for three batches, and a batch makes lasts a couple days. 

 

Cut the pumpkin it two and clean out the *seeds and whatnot. 

 

I wrap the halves in foil, but you don't have to. Bake the halves in the oven at highest temp until soft. about 45 minutes

 

Let cool a bit and scrap out the meat and discard the skin. 

 

Separate into batches, I like four cups to a batch, and freeze what we're not cooking today. 

 

Boil 700 ml water in a large saucepan and add two cubes of chicken stock and three tbsp sugar, stir and let cool a bit. 

 

Puree the pumpkin, adding the chicken stock until you get the consistency a little thicker than you like. 

 

Dump it into the saucepan, heat to a low boil and stir in a cup of milk, and it's ready. 

 

Takes a bit of time, but it's cheap, easy, healthy and tasty. 

 

*When my boy was little we used to bake the seeds together. They are very good, they can be so something of a PITA, and they are not very good unless loaded with salt, which I try to avoid somewhat.

I never really understood that last one.Why they don't put it up for us?  

And thennnn, Now you are getting me upset! And then they have the goad to complain that we missed and peedled in the seat. 

I think as men need to stick together and stop giving in to these unreasonable demands.

I fell for frozen bananas 30 years ago when I tried a frozen banana dipped in chocolate, the freezing seems to transform them.

 

It also makes a great healthy one ingredient ice-cream.

Iscream is one thing I have not tried to make yet. 

I supposes one day I should try, And being in Thailand I sure have a lot bananas. 

Though I am famous in our neighborhood for my banana bread. I always give most of it away, because how much could I eat anyway? and I am trying to keep my weight down

But every time the neighbors seeme always asl when I am going to make Banana bread.

Yes it's a very healthy ice cream / milkshake, very low fat. Here bananas vary sometimes 2, 2.5 or 3

I'll have to try banana bread next time we have some that are past their prime. My wife loved my mother's, but I've never made it. 

 

Anyone have an easy recipe? By easy I mean with standard ingredients I likely already have?

Try ripe strawberries, dipped in sour cream and rolled in brown sugar...

That also sounds heavenly , and unfortunately a sugar bomb. 

  My Dad had developed old age diabetes , and when we scolded him about his eating habits, he would always say, " I don't care, if I am going to go, I want to go happy" (he loved to bake bread)  something that i also like to do. 

The problem was that he did not go. 

He had a stroke, ald laide in bed while my mom and sister had to change is diapers, 

everytime I see him he would cry. Luckily he died right before they wanted to amputate his leg. 

The incident has scared the bejesus of me. Consequently I watch my sugar because There might have a genetic predisposition. I check my sugar every week.  Almost 67 nowSo far so good.

While we are into decadence, here is easy Butterscotch Bananas with Ice Cream:

 

  • Gently heat half cup brown sugar with 100gm butter, in a non-stick frypan until sugar dissolves.
  • Slowly whisk in half cup cream or coconut cream, cook for a further 1 minute or until smooth and combined.
  • Add length cut ripe but firm bananas, heat through and serve with ice-cream and a few crushed peanuts.
If available, can add a dash of rum before adding cream and/or a drop of vanilla essence with the cream.
 
Can serve on pancakes for a few more kilojoules. 
 
A sprinkle of lime juice on the pancakes can balance some sweetness and add some zing.

I like broccoli, but not cooked to pulp. It is a very healthy vegetable and I use all of it.

Cut of the flowers and keep it aside. Start boiling water and put in the hard pieces right from start.

When it is boiling (1-2 minutes), I put in the flowers and then cook for about 3 minutes.

Well do it more and more for vegetables, just cook until just out of raw. No real soft vegetable.

 

Of course you put a lit on your pot to keep heat inside. No big plumes of steam but just a tiny one.

The more steam you create, the more energy you waste. The water doesnt get any hotter.

Only in a pressure cooker it gets hotter. I use it for example preparing cow meat.

 

I fry meat , salted and peppered, brown and then it goes with the gravy in pressure cooker with water, not too much or too less water.

Too much it is watery at the end, too less and your cooker can dry out. Again the cooker just need a little plume of steam out.

Big chunks of cow meat will be soft in a 3/4 to an hour in it. Depending on how thick it is and how you want it.

Of course pig meat, you can do the same. It gets really soft. It is a try&error experience.

Also put some onions in it , as they will help making the meat softer. Yha afterwards the onions are real soft/ pulp, but no problem.

You can also put tamarinde in it, same working, BUT tamarinde is sour, so not too much, depending on your taste and goal

I put more spices in it as garlic, soya sauce, peppers (sambal) and sometimes kurkuma to go that way.

What ever you want.

Essential too think what you want to do with the gravy from all. You can put it over your meat, vegetable as sauce then.

If you did too much water in the cooker, you probably have to make it thicker. Then you have to cook out a part of the amount of water(yup all waste then). Or what also helps, mix it up with flour until a nice gravy, sauce. Or find another thickener.

You can put additional seasoning to the gravy/sauce (tomato can? some more curcuma?), what ever you like to make a nice sauce 

over your meat, vegetable, rice.

I ve seen some high pressure pots in shops in Thailand, but believe they are not really common(yet?)
