Fried eggs and bacon on sliced, toasted and buttered whole wheat bread that I made yesterday.

A couple of homemade brown sandwiches with home-cooked ham and mostly canned tuna, with a cup of coffee without sugar, of course.

Yeast makes the bread rise but needs sugar to feed the yeast.

If you add the right amount of sugar you end up with none after the yeast has fed.

If you add no sugar the yeast starves and the bread doesn't rise properly.

Use 'red' yeast, when using no to low sugar content.  Different color yeast packaging for different sugar ratios.  Most don't stock it, so bought on LAZ.  Keeps forever in freezer.  500gr @ ~140 baht

With 'red' yeast, you'll have no issue with it rising.

Even denser bread, Rye for instance, is 'crushable' :cheesy:

 

Sugar does not need to be added to yeast,  it feeds off the sugar in flour.  Unless the Law in France has changed baguettes must only consist of four ingredients:

Flour

Water

Salt

Yeast. 

 

  Another myth I often hear here,  is ''use warm water''  I use water at 10-18c and the doughs always rise.

I used to work in a bakery but retired at 50 yo due to ill health,  Still baking though at 69yo now,

It was all that standing....

Let me put you off lunch, roast pork, baked potato and mushrooms in Tesco onion gravy.

My standard breakfast rolls: 

1kg Thai bread flour

18g salt

15g instant yeast 

30g canola oil

650ml water

24 x rolls,  dough cut at 70g

Bake at 200c for 20 mins  (in a pre heated oven)

I wrap and place in the fridge freezer and bring out one at at a time. Usually bacon/fried egg butties.

Looks like a really nice place and the food looks good too!

Picked up another whole Beef Tenderloin, so Steak & Eggs for first meal.  Oh yea, and slice of leftover cold pizza 😎

Got up late, went cycling late, had breakfast late, baked beans on toast with sausages and a cup of Typhoo tea.

The wife's breakfast...... it's the fish sauce in the plastic pot that gives it that special touch.   Not for me......

Polished off the rest of the pulled pork, with a side of scrambled, or is it my usual scrambled eggs w/side of pulled pork.   Only cooked the eggs for a bit more substance, and the dog is also on the eggs w/dog food diet/lifestyle.  Keeping with the low sugar lifestyle, and not a low carb lifestyle.

 

Choose your carbs wisely.
