I knew about Thailand and it's food 30 plus years ago, long before I moved here. Assuming I don't is yet another of your daily assumptions. You're missing my point of basic ingredients. Showing me links of things I knew decades ago isn't helping. I know about the regions of Thailand and their different cuisines. They have the same styles all over the US, and in Texas where I came from.
One restaurant owner is from Korat, one is from Chiang Mai, one is from Bangkok, one is from Hua Hin, one is from the deep south and two are from Isaan. These are the restaurants just in San Antonio, let alone Austin, Dallas, Houston and the Hill Country, where we've also eaten.
Curries,Pork, Yellow, Red and Green, Stir Fry of many types, Tom Yum Pla, Som Tam, Nu man hoy, Laab, Gai Yang and more. I've had all types of Thai food living there and in New Jersey as has my family and friends. Almost anything you get here you can in the US, especially in big cities where a lot of Thai live, like San Antonio.
