I buy Nescafe 0%. No sugar,  so I add Equal or Stevia.

Their Thai customers all dump creamer in their cappuccino.

 

Maybe the staff is giggling amongst themselves watching you drink your coffee worng.

I think people are either 'coffee drinkers' or they are not...   by that I mean, they take their coffee seriously...  buy proper beans, grind themselves, have their own espresso machines etc... 

 

I'm fussy as Fff.... about coffee....  order my own (don't roast my own)....  and very rarely IF ever order out (not even a Macchiato or Espresso)...     I'm about to go away, and yes, I'll take my own Coffee (*this time pre-ground for ease - but it has already been roast to my order (medium-dark arabica Grade A+ from the north of Thailand)...

 

I'll take a small FrenchPress... and also a 'PiccoPresso' handheld Espresso Machine...

 

(but anyway - thats not the point of this thread at all, as earlier pointed out - nevertheless, a coffee thread is always good !!)...

Yikes.....before 3 in 1 I only ever dumped a teabag in a cup of hot water for a minute or two......what a heathen.

I myself will eventually buy a coffee maker (had a Keurig in Texas, although I know that's not grinding beans) and grind beans to make fresh, but more people now still use instant than grinding at home. Buying coffee outside is mainly a social thing. I know what you inferred by saying serious coffee drinkers, but most are serious about drinking and aren't grinders.

Yes well, I don't class 3 in 1 as coffee - its more like sugar with a little coffee added.

I agree with the first part. And I am one of those 'coffee drinkers'.

I don't have any machine or coffee at home.

I go every day to my favorite coffee shop. They have all the expensive equipment to make perfect coffee.

Great coffee machine, great grinder, they roast their own coffee, and the people inside are trained and know what they are doing.

It would be difficult and expensive for me to even try to make the same quality espresso at home.

I recently went into a Cafe Amazon and ordered an Americano. I asked to just put a little bit milk inside the coffee as I always do. The barista told me that this is not possible because this would be a Cappuccino and an Americano is black coffee. I explained to her that I just needed a few drops of milk into my otherwise black coffee. She called her suvervisor who also refused to include milk even when I offered to pay a surcharge. Fortunately this happened only in one particular branch, normally the staff is most happy to include a bit of milk.

I know it's an Aussie thing but recently I ordered a flat white for the first time. It was awful and cold which can't have been right. I said nothing.

According to Mr Chat, a Flat White is like a Cappucino but with a bit less milk, not quite as foamy and usually served in a smaller cup.. 

How it can be cold if it's an Espresso with steamed milk on top I cannot guess.

But all in all they are only coffee and milk in varying proportions.

I always order an Americano ice coffee with 2 equals and a tad of soymilk or skim if they don't have soy. Never had any trouble but once they charged me for the milk  Most of the time I carry Equal with me because many places don't carry it. Amazon usually does and of course Starbucks. One of the first things I learned in Thai here was ordering food and coffee, along with numbers, so things were easier.

The grinders & espresso machines in the coffee shops are better than I have a home. 
But, I rarely find that I can get as good a coffee when out & about than when at home.

Maybe it’s the quality of the beans the shops buy in bulk.

 

It seems the staff know how to make a coffee, but they don’t truly know how to pull a shot - they’re just shop workers not fully trained baristas who can truly dial in a high end machine.

 

Any machine needs to be properly dialled in…   Dialled in to the bean, roast level, grind setting, amount of grind, distribution & de-clumping in the portafilter, perfect tamping, pre-infusion, length / timing & amount of shot….  

I like a 2:1 ratio of Medium Dark arabica A+ grade - which for me means 18gms of grind, 8 seconds pre-infused, +30 second pull at 95-96 deg C, with 36gms of espresso end result.

 

Change the bean & all other settings need adjustment, go to a dark roast & I’ll reduce the temp & may need to adjust the grind size to get the same 2:1 ration on 30 seconds….  It’s a balancing act…

 

Staff in most coffee shops won’t do that, I’m not sure how invested the owners are in getting that level of detail….  In my ‘recipe also drifts’….
 

It’s over the top perhaps, it’s too detailed, it’s too much hassle if we only want a simple cup of coffee etc…. But my coffee at home is better than when out for these reasons.

 

But a ‘Dirty coffee’ (also known as a cowboy coffee) is also much better than a 3in1…!!!!

 

(dirty coffee = just fine ground coffee & hot water - i.e. if camping & no other option).

Did I ever drink the perfect espresso? I don't know.

I know that I had some very good espresso.

90% of the time I go always to the same shop, and it seems to me they know what they are doing. Would I be able to do it better?

In theory I could spend a couple of thousands of dollars and then try to dial in everything in detail. How long will that take? Basically forever.

So, for that reason, I am happy with the best espresso which I can buy, and which is very good - without all the hassle and cost at home.

Obviously, I am lucky to have such a shop around the corner.

Agree, these little inconveniences happen occasionally in Thailand. 

 

I found most times the change is a nice experience.

My coffee comes from a Nescafe tin, 17 baht,

 

Pour into mug, microwave 1 minute.

Ultimately it comes down to what we are happy with…. I liked the idea of trying to achieve that perfect shot and went down the rabbit hole of doing so….

Agree, I’ve spent plenty… & wasted loads of coffee…   It’s kind of a hobby, but once it’s right the adjustments are fine tuning, so it’s not really time consuming.

I can now tell if my shot has been pulled 5 seconds too quickly or 5 seconds too slowly.

If you’ve found a good shop, it’s likely owner run & they can be exceptionally detailed in their process…. & know what they are doing - a great find & also great to support them.

 

Whats the shop, if it’s convenient I’d like to give then a try…

also another point…. Milk… when waiting something longer than an espresso, i.e. a latte, I personally struggle to get the perfect silky froth…. I’m working on that too !
