Unless the wind is strong you won't get waves in the gulf of Thailand. 

 

Head over to the west coast, Andaman sea has nice big waves.

Rayong has a surf shop that rents boards and gives lessons during the season. Nothing big. Just small waves perfect for learning to stand up and ride. NOT FOR BETTER SURFERS!  Too small for you. But for kids and new learners, perfect!

Great seafood restaurants along the beach.

Nowhere near Pattaya I know but Kata Noi and Karon in Phuket have half decent waves in low season. But yes you may as well stay in Sydney if surfings your thing.

Perhaps the closest to real Thai food you are going to find on Phuket and what a view.  Totally agree, and the surf shop is right next door. My twins learned to surf  there.

One of the only vendors (KataMama) open during the worst of covid early shutdown, as caters to locals, so had no problem surviving when tourist disappeared, as the other 99% of surfside venders were shuttered.

'Laem Ya Surf Club,' towards the end of the Rayong beaches, just before the turn inland.  There are several very nice hotels on both sides of the shop, and restaurants, food vendors on the sand, and no crowds. 50Baht to keep your chairs, table, and umbrella. The vendors are unobtrusive and don't keep hassling you every few hours.
Do a Google street view of the area. Nice sand beaches, 50m of trees for shade on one side, a line of food trucks, the road, restaurants and shops, and hotels on the other side.

If the beach has surfable waves, the life-guards will red-flag it, and group-beat you for your own safety if you try to enter the water.  Or so I've read lately.

AFAIK A bedsit in sydney is basically the same as a dingy fan room in Thailand.

Basically, a room with a bed in one corner.. toilet/shower in the other.

Karon beach Phuket has had some decent waves the two times I went there.  Kata not so much as it is more of a cove almost.  Of course can depend on wind and the weather
