As far as I'm concerned, nothing shouts low-class piece of cr*p like treating people a bit lower in the pecking scale poorly. 

I would liken Ritter chocolate to a McDonald's burger. It's not great, but it certainly is not the worst thing out there.

except for their imported stuff, produce -- fruit prices are criminal--  and fresh meat (chicken, pork, beef, and seafood) products there is plenty of stuff at Villa that is the same price or cheaper than anywhere else. You just need to know what specifically you are there for.

Then there are the things you can only get at Villa. I try to avoid Villa altogether, but i always need to supplement the bi-weekly shopping

No, what I'm saying is I'm very capable of independent thinking but I've never had really low end chocolate like Ritter before, so it was a interesting to see how much filler and how much junk they had added, to create some sort of artificial texture. It was nasty.

I started making my own. I made half a kilo yesterday, with almonds.
Good quality cocoa powder, good quality cocoa butter, sweetener of choice, a pinch of salt, and a lick of vanilla.  Takes about 15 minutes and 1/2 the price of good quality chocolate bars!
(P.S. If you prefer Milk Chocolate, add in powdered milk!)

All governments, and all government officials are at the very top of my list of things that I don't like. 

 

The quality of many products you might find is not always the same quality that you would find at home. There may even be country to country differences. Products like Nutella, Carnation milk products... Different recipes dependent on location.

Then there is shrinkflation and/or ludicrous price rises.

Tastes different because they use fats with a higher melting temperature in the chocolate for sale in the hotter countries.

So deodorised cocoa powder and deodorised cocoa butter. All the characteristics removed.  In fact, Ghirardelli sells an unprocessed cocoa powder, though not sure it's sold in Thailand as I haven't looked. I usually travel with my own high quality ingredients.

Though I might use the ingredients you mention, when making chocolate that has other ingredients that you wish to stand out.

They might use different fats but they're also using things that resemble wax, and I know low quality when I taste it.

I said Dutch-processed cocoa powder, NOT  deodorized.

Dutch-processed removes some of the characteristics of the cocoa bean. Similarly deodorised cocoa butter.
