if you order a dish in Thailand and it's not cooked how you like it, would you send it back?

I don't think we are living in the same Thailand been here 20 years and still can only think of one time I ordered a medium rare beef and it was well done. I did eat it anyway because I know when over cooked the only way to fix it is to throw it away and make a new. I did let the owner know tho, and he wanted to compensate me, but it was good so I declined.

 

Or maybe we have different levels of tolerance. I might be perfectly fine with something you send back to the kitchen.

It depends on how big the error is. If I get raw chicken, then it will definitely go back. Happened a few times. And of course, if it comes out like you say, and you ordered totally different, then they would either have to fix it, or take it back. No so much problems with that, though. Might be around 10 times in the last 20 years, so that could have been in any other country as well.

Send it back by all means. Specify very clearly in your order what you want:

"not spicy" is still spicy to some; hence make sure "zero chili"
"not sweet", same story; tell them you're a diabetic 
the cooking style is another subject; looking at the hygiene at most street kitchens you certainly want any meat "well done" as everything else might give you the willies. You will not die over a pink chicken - worst case is serious diarrhea or vomitting. 

No pineapple on a pizza, then order a different pizza. Should there still be pineapple pieces on the pizza, remove it. The ice in a glass for your beer can be disposed of before you pour the beer. 

If all that does not work, do it as I do. All my Thai food desires (and I love it) is being cooked by my wife, who still applies the same kitchen discipline for more than 40 years, no sugar, no MSG and seasoned to taste with no chili for me 😉

Even before I opened this post I kind of guessed who sent it!

I've been living in Thailand for 20 years now and have only had reservations about one Thai meal in all that time.

Politeness and manners cost nothing and even that incident was corrected quickly.

This is nothing else other than attention seeking and self-aggrandisement!

your not very lucky with your restaurant choices, or very picky with the food once its arrived. 20 years and i don't recall sending food back, maybe not retuning to a restaurant, but not because of undercooked food, or too spicy

I don’t send food back but just wouldn’t go back.

 

Not rocket science but I would try to avoid the situation coming up in the first place…

 

1) Unless you’re eating in a restaurant you know well / recommended, eat local food and stay away from burgers, steak, pizza or non-spicy curries - these aren’t natural to the Thai palette / aren’t cooked at home here. I normally find Thai food bland when I’m in the West so avoid it there and I mostly avoid non-trusted Western restaurants here.
 

2) If you’re eating in a “tourist” hub almost anywhere in the world the restaurants don’t rely on repeat business so often don’t care.  Try to avoid eating anywhere near the “centre” or again rely on trusted places.

In general there is no point in sending back a dish here.

Exceptions might be at higher end European food places.

Just don't go back. 

I did have one successful send back at a Thai restaurant and that was only because they sent me a completely different dish than what I ordered.

Other times I learned that their "fix its" generally were lazy efforts that made things worse and they never recooked the dish.

Definitely %100 yes.Be careful as many places take orders on numbers such as E20 and have different pictures besides them and there for consider it your fault so you pay.
