Can anyone recommend a sharpening stone....knives, general stuff

I have a really expensive stone I use for fine work, but look for a decent all purpose whetsone for general kitchen knives etc.

I have one I bought locally but a bit course and rough. Looking for a not too expensive one with the fine / course on either side

Something off Lazada? Any recommendations / links appreciated

I bought mine from the local hardware shop, though I did go online to get a picture and a translation into Thai.

 

I generally use olive oil (I have some handy) and give each knife and the cleaver about 50 stroke on each edge.

I brought 400/1000, 3000/8000 that came as a  deal from Temu for a few hundred Bht - I've now got really good sharp knives instead of reasonably sharp knives.

Uf Y sharpen outside tools like the garden shears, the sickle or the weed whacker blade, I usually use my angle grinder to get the nicks out and the finer bench grinder to finish them off. they don't need to be as sharp as the knives.

Sharp Pebble isn't bad for basic knife use sharpener.  I'd use them for standard, machine-made knives sharpening, but use better products if you have $$$ hand-forged knives.

The grits shown here are for polishing the edge, but sharpening/honing should be more like 600/1000 grit stones.

DO NOT USE any of these "V" sharpeners where you draw a blade along ceramics or steels set in a V pattern.  Their angles are incorrect for kitchen knives and will destroy the edge to the point where you'll need to have them reground to get them back to normal.

I got one of these yesterday for 90 baht, supposedly Japan. Only difference is mine is 6000 / 1000 but the white side is the fine (6000) side. As good as any stone I ever used and sharpened to a razor edge (and I mean shave hair off your arm easily). Only used water. Not sure how long it will last but first impressions unbelievable.

 

I also have one of those Global ceramic water wheel sharpeners which are expensive but do a superb job. Edge never lasts longer than a week but given the treatment my wife gives our kitchen knives surprised they keep an edge that longi

 

By the way, anyone wanting a very cheap but excellent set of knives, equivalent to Victorinox commercial knives, same steel mix apparently....Cutlery pro.... very hard to beat. I had a set of Zwillings (too heavy for me) I sold immediately after I tried these. 5 years on and still awesome. If you Google CUTLERY PRO you will find a few suppliers on Lazada, Shopee etc. Havent checked the prices lately but 8 / 10 inch chefs knife or butchers knife under 1000 baht. 5 years on still easy to sharpen and hold a keen edge, handle / joints as good as new and I use them semi commercially every day

The above post introduces the best answer.

Knifes don't need sharpening very often if a honing tool is used to restore the edge.

Microscopically, the very sharp edge of a knife can bend or fold over in use, reducing its apparent sharpness.  A few light strokes on a honing tool can restore this edge without taking any metal off.

I sharpen our kitchen knives about once a year.  I hone them every few weeks.  Once honed, they will slice paper cleanly again.  I expect this is the result we all want.

You can find a great variety of stones in locations where people tap rubber trees, there are different grades. We have rubber trees here and the knives must be very sharp. This link as an example, we buy our stones locally (Loei).

Aliexpress sells them for fairly cheap. They sells sets, starting at around 10 dollars, depending on how many grits arw in the set. It's worth trying. If the stones suck, you can just return them. I've bought lots of stuff from AliExpress before and rarely had problems, and they all turned out in my favor. I haven't ordered any sharpening stones  yet, but if there's a problem with them, you'll definitely get your money back because it's a Chinese online store and they're ALL about their reputation. So, the few times someone tried to play a number on me AliExpress always sided with me and got my money back ASAP.

Carborundum Stone - 2-sided, fine and coarse. 

Available in nearly all Bic C, local DIYs.

Or any other local shop that sells small household maintenance goods.

Lotus sells a hand-held steel sharpener used by chefs.

Or, just take a photograph or use the 'Translate' App and write 'Carborundum stone' - it will give you the Thai word in Thai and transliterated English, which is,                                   "Hin kharborandam"
