Maybe be only successful with westerners willing to pay higher costs.

Most locals either won't pay for better bread or don't care or can't tell the difference as they have never tried proper French bread. 

Maybe Vietnam has more bakeries or better bakeries as they were set up by the French... I dunno. Bread is not a big thing with the Thais.

I definitely had Westerners in mind. As you say, Thais don't even eat it, this woman has been mentioned being in farang-intensive places (Buakhao, tukcom…).

 

Marin provided the answer to this mystery, the Asians blend rice flour with wheat flour, most likely because they can't digest wheat-only (my Thai wife can only manage one slice of French bread).

Wheat is bad for everyone. People with gluten sensitivities are canaries in a coalmine and they are actually being protected from health issues further down the line. 

 

In the old days, it took 3 days to make bread. They would ferment the heck out of those grains to make them digestible and get rid of the anti-nutrients. But that's not feasible for modern-day capitalism.

 

Wonder Bread now takes 15 minutes to make in a factory.  

 

Proper decent sourdough bread (not sure it even exists in Thailand) might be the only relatively safe bread to eat in this day and age. There is at least some fermentation going on there.

Yeah, I cut down on it myself as it's a carb bomb. As with everything, balance and moderation is the way to go.

Nicer if it was multi grain though. Reminds me of the wonderful VN sandwich shop in Vientiane by the river.

My girlfriend here never tried real bread like I offered her, Royal Sprouted Grain, which isn't too bad for 7-11 and Lotus, etc kinds. She only had the cheap kind you get at local shops, which isn't even as good as Wonder bread. I use Dalfour's jellies, which are probably the best you can get in Thailand, and most everywhere else as far as sugar free kinds, and she loves it.

 

When we were in Hanoi in March, we had Banh Mi's almost every day, and of course they were great. I had some back in Austin, Texas, made by Vietnamese people, and they're just as good, using the right ingredients and methods.

 

The bread makes the sandwich, whether it;s a Jewish deli type in New York, a Reuben or a regular sub sandwich. Even there, Subway bread isn't as good as Quiznos, Firehouse or Mikes. Many think you can't get good bread in the states but there are quite a few indie places that make great breads, and a couple here in Thailand I hear have good bread.

Yes, the crepe looks mouth watering but I mentioned the enclosure, is this not a Vietnamese bread roll, it looks like one?

She has probably retired to Florida now. 

French bread is like their wine absolute crap, they've been conning the world for centuries. Not anymore the New World wines are leaving them in the dust for a fraction of the price
