I personally prefer machine made bread, better quality and taste.

I use 75/25% bread/rye flour which gives it a bit of a bite.

I use my slicing rack as soon as the loaf has cooled, and into a plastic tub in the freezer, each two slices separated by baking paper so no sticking together.

Also use the machine to make yoghurt, burger buns and pizza doughs.

Haefele make from Lazada, about Bht 3000. Love it.

'YOGHURT'

Can you please share some details, but I have the 3lb LAHOME machine coming later today and I guess there will be Yoghurt instructions in the operating manual (if there is one).

  • Also check at Yok Intertrade on Super Highway. They have many kinds.

1/2 carton of Bulgaria yoghurt (22bht) from 7-11 works perfectly as the starter bacteria.

Yoghurt is extremely easy to make, and never finish off a batch, always save a cup or so, to make your next batch. Don't need a machine for yoghurt, though convenient.

Same with Natto, if a fan, though need to get the beans soft, and can be a long process without a pressure cooker.

Funny, mine just arrived about half an hour ago and I was reading the manual and saw the yogurt instructions. Not much there really.

Yoghurt is so easy, just bring milk up to a temp, add active yoghurt, and keep at temp for certain amount of time, and you have a big batch of yoghurt.

Even Dairy Rich milk powder works.

  • shop

  • location

  • price

  • photo maybe

Thanks

Couple of hundred from Lazada, including the knife.

Now those buns are really Whoppers! I do not like the meat patty falling out of the sides of a small bun.

The toaster lives in the slicing rack when not being used or photographed.

I don't use a machine, as completely unnecessary, unless you don't have 2 hrs of free time, and just want to press a button & forget it.

I use a 70 / 30 % ratio, bread & WWF. Using a bread machine, it's going to take more than a few times to get good results. I use a stand mixer, and have used a food processor also. Can even do it by hand, just a bit more exercise kneading.

image.png

I'm also using the White Swan because of its high protein content, close to 14%. But the quality of the flour itself is not consistent. I always follow the same recipe, the outcome is different, not bad, but different each time. I built a pizza oven with firebricks and bake ten baguettes-like breads at a time (Pompei style oven Forno Bravo design, inside Ø 100 cm). Likewise, I also would like to find another source for my flour. In Chiang Mai, you have this shop : https://www.cmbakermart.biz/home.

Neither soft, not too dense. Took a while for me to dial it in the way I like. I use 'red' yeast, for no to low sugar. Most in TH don't carry it, but LAZ does. Just 5 ingredients:

flours 350g/150g bread flour / WWF

water 325g

salt 10g

sugar 10g

yeast 10-15g

Use this recipe for 1 loaf instead of 4 banquettes. If not using WWF, then 350g water & 10g yeast.

About 10 types of yeast and 10 types of bread flour in YoK (opposite Makro on Superhighway).

Bread flour starts at 34bht/Kg.

Makro charges way too much for flour.

I don't buy my bread flour at Makro either. Small local bakery supply shop sells it for 34 also. Though only and cheapest place I could find whole wheat flour I like, was Makro, but at Hua Hin, 100 kms away.

Yeast, I get online, as local shop nor Makro carry the red.

Thanks for all the inputs from many members.

The wood cutting board looks like one of our boards at home (in CM) . My eldest thai granddaughter (21 next week, yr 3 at CM Uni) is the driver of the bread making 'project'. She's been scrubbing all our cutting boards for several days with haiter, vinegar and lemon juice. 99% of the mold now gone.

Yep, I scrub mine every time it has been used.

When I took my Hygiene Exam to run my hotel in 80s, we were taught to have separate boards, plastic if possible, for bread, dairy, salad and meat. Then throw it all together on a ham/cheese/ salad butty.

And mine is not at all hygienic, and I've lived to age 70 with hardly any vaccinations.

Jasco offers nice cutting boards in different colors and sizes to keep them separate.

A good idea, as meat should never be cut on the same board unless it's after the veggies or fruit. Washing is always best. I see the new Titanium boards they have, and will likely get one, even though i would still wash it before each use.

As far as the bread makers listed here, I'm thinking of getting one while i still live here, as I and my daughter eat bread daily and would much prefer making my own. Is the Lahome easy to clean and it seems others like it. Are there others equally as good?It wouldn't work back home as the voltage isn't the same but I'd just give it away when we leave. I'm guessing the instructions are in English also.

It would depend on your standards of hygene,

I wipe mine out with a damp cloth before baking, that's good enough for me.

Many people, as myself, thought plastic (aside from micro plastic ingestion), was a better cutting board over wood. I use both, usually wood, as kinder to knifes, and not concerned about bacteria. Obvious not the same board for raw meats when actually using.

Wife saw a YT vid on stainless steel cutting board, being the 'safest'. "Don't think so honey, damn expensive, and we have 6 boards already" 3 wood, 3 plastic, and steel against steel, doesn't sound like a good idea. Sharpen (realign) the knives enough as it is.

Take no special care of or cleaning boards. Wife did sand them all down, and maybe oil them, but didn't notice. Plastic boards are years old, so I go completely against AI info, and still never sick from using our cutting boards. That AI info ....

After having H Pylori I got here, I'm more careful about washing than ever before, which was pretty careful. Many aren't affected by it but if you are, it's a nasty thing, and really screws with your gut.

It looks like stainless steel so it would be easy to clean, at least as far as the bread holder. My daughter has one she bought in the US, but I'd have to ask her what brand. She said it's not as hard as her air fryer to clean, but worth it. The bread she made when I visited was excellent.

Raw meat, yes, keep separate. Ham or similar? It is going on the same bread and then down the same gob, so it doesn't really matter.

Caught by sharing food and utensils with infected people.

Nothing to do with washing your cutting board.

Ha ha, I just had a roast pork sandwich assembled in just the way you described!

It can happen anywhere. Sharing, kissing another who has it, water sources, contaminated food anywhere. I don't share utensils with anyone nor glasses, but anyone can have it and give it to someone it affects, and SE Asia is a high prevalence place for it.

Here's a twist in my bread maker saga:

  • I ordered the LAHOME 3lb bread maker from lazada. I told my grandaughter and sent her a message on LINE to inform her I had ordered the machine. 2 hrs later she responded OK. it arrived at my home here in CM this morning and I paid COD 2,200Baht.

  • My granddaughter also ordedered the machine from Shopee.

  • Shopee truck arrived late this afternoon with the second machine, driver wanted 2,563Baht COD (scan). My Thai daughter in law explained that we had taken delivery of same machinsame machine this morning. Drver said 'please call Shopee in Bkk and tell them you want to cancel the order. We didn't pay the COD 2,563 Baht and he took the machine away. He indicated that he or another driver would come back on Saturday. I tried to call Shopee but line aleays busy.

  • We clearly don't want 2 machines. If there's any CM Member who want to buy a LAHOME 3lb machine (unboxed) I will accept 1,900Baht to sell it to a CM member. If interested please advise urgently so we can make a plan before more discusion with Shopee tomorrow morning. Waiting for your email message to alanwbkk @ gmail.com (remove spaces), if you're interested, or call me on 08 1808 8155.

Has anybody run into this?

I've had 2 bread machines....Both - between year 2 & 3 quit producing good bread..... Ingredients checked ok + then replaced outright just to check - same cycles used as when productive.... Yet the bread won't rise....

One good loaf in 11 attempts where it used to be a 90-95% success rate....

It's almost like they lost their programming.....

Buying local bread is like trying to chew on a mouthful of tasteless mush.....
