I am amazed.....not sure why.....at the quality of Thai potatoes........best I've every seen/tasted.

Most potatoes here are Chinese imports, but Chinese or Thai..... they are all sh&te!

I don't do chips anymore but mine were always perfect with any potato. Peel and cut then soak in water for an hour or so...dry them off then cook in lower heat, take out and dry the oil off while the cooker increases the heat by 20 pop back in for 2 minutes and bingo...all this crap about potatoes is rubbish, even got the chippy king of Pattaya saying you need this or that potato.... absolute rubbish..a tatty is a tatty if it's cooked properly

Yes. I usually use pork sausages for the meat content, and the thinly sliced spicy chorizo for a bit of extra flavour and bite.

The boiled potatoes, start to break up in the frying process when mixed in with all the other ingredients.

 

Here is my take on it:

Peel and boil potatoes. Drain and set aside. I usually cut into 1" chunks.

Fry the pork sausages ( I use three),  and cut into 1" slices. Return to frying pan with Chorizo for a minute or so to mix the flavour.

Add the potatoes, and stir fry to absorb the flavours.

Add the chopped Kale and fry until cooked.  JOB DONE.

 

You can optionally add some chilli powder for a bit more kick, but I prefer it as is.

That area is where the potatoes came from in first instance brought to western worlds by the Spanish conquistadors

Looks good and tastes amazing, but you are correct, probably not good if you eat them too often, but once a month, hey delicious!

Absolutely as with any fried food, which is considered a poison in this household.

Spuds with eggs are often on the menu for breakfast though spuds tend to make the wife chunky, so she lays off them.

Luckily the wife has never put on weight, and enjoys the potatoes. Up early and finished about 30 minutes ago.

I have boiled potatoes with my evening Thai dinner pad Thai fried egg and steamed rice can't beat it delicious 😋

The best potatoes  I had  was when I grew up in my old home country the Netherlands , Than in AUS they were good also .

Here in Thailand  they could be a better and there isn't not much choice.

I read somewhere that even the mud the spud comes with is good for you, I must try one day.

What potatoes to buy?

 

I've found the small/medium size ones covered in mud are the best

 

big clean ones are the worse, i avoid these unless no choice, sometimes have bad patches inside.

 

I now buy from the market, usually 25-30 baht a kilo, better than supermarket 

I think my mother always bought King Edward potatoes make good chips,

I wholeheartedly agree.  Living for a time in England I frequently went to Sturdey's Castle, an English pub with a menu primarily consisting of 40 or so baked potatoes with a multitude of toppings.  Pretty sure they were potatoes from Ireland but not sure of that.  Very large and delicious!
